New Fresh 2026 Menu at the Merino Restaurant
A Fresh New Menu Has Arrived at The Merino Restaurant
There’s something new cooking at The Merino Restaurant, and we’re excited to introduce our latest dinner menu at Merino Motor Inn.
Our new menu brings together familiar favourites, quality ingredients and a few flavours you might not expect to find in St George. From Korean and Japanese influences through to beautifully grilled steaks and hearty mains, the focus is on generous, flavour-packed food made for an enjoyable night out.
Start with Something Different
The new starters are perfect for sharing around the table — although you may decide you want one all to yourself.
Try the Prawn Mango Salsa, with prawns coated in sweet wasabi mayo and served over fresh mango salsa, or our Maranoa Chicken Bites, featuring tender chicken thigh coated in our Korean fried chicken sauce and finished with mixed greens and cashew nuts.
There’s also Avocado Tartare, Beef Sliders and pan-seared Scallops served with sweet pea and mint purée and creamy lemon butter.
Fresh, Colourful Salads
For something lighter, the Kale Avocado Salad combines kale, quinoa, chickpeas, blueberries, goat cheese, toasted almonds and avocado with pomegranate dressing.
Mushroom lovers can opt for the Warm Mushroom Salad, with sautéed mixed mushrooms, mixed lettuce and cherry tomatoes finished with Japanese dressing.
The Main Event
At the heart of the new menu are some seriously satisfying mains.
Our 250g 100-Day Grain-Fed Sirloin is grilled and served with baked potato, caramelised onions, garlic-buttered baby carrots and veal jus. The Pork Chop Cutlet pairs a perfectly grilled pork cutlet with mixed mushrooms, beetroot purée, garlic-buttered baby carrots and red wine jus.
And when dinner calls for something a little more impressive, there’s the Seasonal Beef Tomahawk. Designed for two and requiring advance ordering, it comes with your choice of sides and sauces — a proper centrepiece for the table.
The Surf & Turf T-Bone brings together a 500g pasture-fed T-bone, prawns, grilled asparagus and béarnaise sauce.
Meet Our Signature Dishes
We’ve also introduced a selection of dishes that give the new menu its own distinctive Merino personality.
The Spatchcock features tender grilled chicken served with Kenyan mash and peas, grilled corn ribs and honey gochujang, topped with mixed nuts.
Our wonderfully named ‘Not George’ Lamb Shank is slow cooked and served with Moroccan harissa cous cous and vegetables, cooked raisins and lamb jus.
You’ll also find Pork Belly Kimchi Stew, a Korean-style dish served with rice and tofu, and our Kenyan Inspired Snapper, combining grilled king snapper with spiced roast chat potatoes, coconut tomato sauce, pickled onions and fried garlic.
Don’t Forget the Sides
No great dinner is complete without the extras. The new selection includes Truffle Shoestring Fries, Veg Fried Rice, Silky Mashed Potatoes, Kimchi, Yuzu Butter Mixed Mushrooms, Mixed Vegetables and Cous Cous.
